| About the winery | Bodegas Chaves is a family business that produces wines in the Spanish wine region of Galicia. Galicia is unique in Spain because it mainly produces white wine. Chaves is the oldest winery in the Rías Baixas appellation in Galicia. They have been making very attractive Albariño wines since 1955. Chaves also produces surprising wines from other regions in Galicia under the name Silva Daponte. In Monterrei, fresh Godello and Mencía are produced. In Ribeiro, a spicy Treixadura is produced. |
| Vineyard and region | From vineyards in Cambados in the Val do Salnés subzone in the Rías Baixas region of Galicia. The vineyards are located on hills at an altitude of about 100 metres, with strong maritime influences from the Atlantic Ocean. From the vineyards, you can see the five islands (“Cinco Islas”) off the coast. The soil is stony, with granite, clay and sand. The vineyards face south. They are terraced and all the vines are trained on pergolas so that the wind can blow through the vineyards. Old vines (more than 35 years old) are used for this wine, which are descended from the very first 200-year-old Albariño clone in the area. |
| Vinification | This sparkling wine is made using the same method as Champagne: the méthode traditionnelle. The wine undergoes a second fermentation and maturation for 9 months, which gives the wine a refined bubble. |
