Location: Soturac, on the terraces of the Lot Valley, 40 km west of Cahors.

Owner: Alain Gayraud, a family estate for seven generations.

Soil: 60% clay-limestone, 30% limestone, 10% clay-gravel.

Average yield: 45 hl/ha

Grape varieties: Cot (90%), Tannat (10%)

Age of the vineyard: 25-60 years

Ageing potential: 5 to 15 years

Cultivation: The soil is worked to preserve natural bacterial life, limited use of plant protection products; yield reduction through green harvesting; leaf removal.

Vinification: Long vinification of 30 days with temperature control, délestage (breaking up the cap by pouring all the juice over it) and gentle remontage (pouring the juice back over the cap).

Ageing: For 14 months in oak barrels, 1/3 new, 1/3 1 year old, 1/3 2 years old.

Description: Beautiful, deep purple colour, typical of the appellation; pure and complex nose with grilled aromas, herbs, red fruit and a hint of mint, which is reflected on the palate, with a well-structured flavour and a hint of gingerbread.
